Arabian Buttered Eggs with Mint and Lemon

This delicious breakfast of eggs and Turkish bread proves why protein is key!

What you'll need on your shopping list:

1 loaf Turkish bread, halved horizontally
70ml extra virgin olive oil
1 large red onion, halved, thinly sliced
2 lemons, juiced
150g butter, chopped
6 eggs
350g (1 1/4 cups) Greek-style yoghurt
1 clove garlic, crushed
1 teaspoon ground cumin
1/2 teaspoon dried chilli flakes
1/2 bunch mint, leaves picked, small leaves reserved, large leaves roughly chopped

Mango Salsa

  • 1 large mango, peeled, finely diced
  • 1 Lebanese cucumber, finely diced
  • 1/2 small red onion, finely chopped\
  • 2 tablespoons torn fresh mint leaves
  • 1 tablespoon torn fresh coriander leaves
  • 1 tablespoon lime juice

Grilled prawns with tropical fruit salsa

Lunch is served with these delicious grilled prawns and a tropical fruit salsa…yum!

What you'll need on your shopping list:

  • 2 teaspoons hot chilli sauce
  • 1 tablespoon each light soy sauce and honey
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons chopped coriander
  • 2 garlic cloves, crushed
  • 1/4 cup (60ml) lime juice, plus 3 small limes cut into thin wedges
  • 24 green prawns, peeled (tails intact)
  • 12 young thin lemongrass stems (or use soaked bamboo skewers)
  • Steamed jasmine rice, to serve
  • Tropical fruit salsa
  • 1 mango, flesh finely chopped
  • 1 avocado or cucumber, finely chopped
  • 1/2 small red papaya
  • 1 long red chilli, deseeded, finely chopped
  • 1 tablespoon each fish sauce and lime juice
